Missoula Montana Mousse

Who can resist a bad culinary pun! As soon as I saw that beautiful cut of locally hunted meat in my Montana Moose Recipe, I knew I had to make Moose with Mousse.

This is a slightly easier version of a classic mousse recipe. You can tell because classic recipes never include microwave directions. Moose only has seven ingredients. Achieving that classic texture is all about technique, not expense. If you’re willing to be patient with it you can achieve a texture that would’ve made your young grandparents drool.

Mousse Ingredients

  • 1 cup semisweet chocolate chips
  • 1/3 cup whipping cream
  • 2 1/2 tbsp sugar
  • Pinch salt
  • 3 eggs, separated
  • 2/3 cup whipping cream
  • 1/4 tsp vanilla extract

Moose Directions

  • Combine the semisweet chocolate chips, 1/3 cup whipping cream, sugar, and salt in a microwave safe bowl.
  • Microwave for 15 seconds, stir, and repeat 4-5 times, or until the mix is smooth and glossy. Don’t add time to the microwave or else your chocolate will burn. You’ll think you can save time by stirring every 20 seconds instead of every 15, but ignore those voices in your head. That road only leads to depressingly scorched chocolate.
  • Once it’s melted, smooth, and glossy, let the chocolate cool.
  • While you’re waiting, pour the remaining 2/3 cup whipping cream and vanilla into a stand mixer and whip it until it has soft peaks.
  • Add the egg yolks (not the whites!) to the chocolate and beat until the mix is smooth. Next add the remaining un-whipped cream and stir it in until you have a nice, smooth, creamy consistency.  
  • Thoroughly clean your bowl and mixer blades Now pour in the egg whites and beat them until they too have soft peaks. Gently fold a third into the chocolate mix. Repeat until all the egg whites are incorporated. The air bubbles in the egg whites are what gives your mousse a light texture, so take care to barely mix it in. The more you mash it, the heavier your mousse will become.
  • Carefully spoon the mouse into serving cups and refrigerate for at least 3 hours while it sets.
  • If you’d like to literally spice this up, try adding ½ tsp Chinese 5 spice or garam masala to the chocolate chips!

Vanilla Spice Whipped Cream

Mousse is always served with a tower of freshly whipped cream! It’s easy to give yours a delicious flavor that really makes your mousse shine!

Mix everything well and beat the liquids relentlessly until they transform from a liquid into a fluffy, aerated cream.

  • 1 cup whipping cream
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • 1/4 – 1/8 tsp garam masala, Chinese 5 spice, or pumpkin pie spice

    Mix everything well and beat the liquids relentlessly until they transform from a liquid into a fluffy, aerated cream.
